My friends, there is no bigger meal at our house than Thanksgiving. Each year, it gives me an opportunity to re-make and tweak all of our favorite recipes. And this fresh green bean casserole recipe is one improvement that I’m particularly proud of. This year, it will find a home on the table between my versions of mom’s corn pudding casserole and Aunt Judy’s strawberry pretzel salad.

At our house, we have a tradition with Thanksgiving. All of us get to pick one “favorite” dish for the lineup, and I promise to make everything on that list. And, at this point, my love of checklists and systems has really nailed down the process of how to make Thanksgiving dinner stress-free.

But, here’s the secret… it doesn’t matter what the favorites are. They want them all. If something gets overlooked, there’s a mutiny in the kitchen that starts with a chorus of “But, we have to have that!”

Believe me, I’m not complaining. I love knowing that my family loves eating these dishes. Thanksgiving is a holiday that I remember fondly from my childhood. There were times that we struggled, but my mom never failed to make this opportunity to practice gratitude feel like a feast.

You probably already know your way around a green been casserole. But, I’m convinced that this version is my best one yet. It starts with fresh beans, giving it the texture upgrade that keeps them tender crisp instead of becoming mushy.

It’s the classic side dish you already know and love, but with a little more life in every bite. A little more effort? Sure. But it’s so, so worth it.

Ingredients and Substitutions

The Beans – I’ll give my full advice on how to buy the best green beans in the Expert Tip, but be choosy with your beans. This is the ingredient that makes or breaks this casserole.

Butter & Garlic – I use salted butter and fresh garlic when cooking the mushrooms. It makes a difference, but you can swap for garlic powder in a pinch.

Mushrooms – You can use whatever fresh mushrooms you have on hand, but my favorite varieties are white button and cremini. They have a rich, savory flavor, and are easy to prepare.

Seasonings – I use kosher salt and freshly ground black pepper in my cooking, unless otherwise specified.

The Sauce – We’re going to use a mix of chicken broth and heavy cream to make the cream sauce. You could swap for a lower-fat dairy option, but I don’t recommend it. The heavy cream makes this dish taste richer.

Flour – This is used to thicken the sauce. Any all-purpose flour will do.

The Topping – Fried onions are the classic finish for this casserole. And, with good reason! I find that it’s worth it to splurge on the French’s brand for this dish. I’ve tried a few store brands, and the texture isn’t the same.

Notes on Equipment

  • Chef’s knife. Food prep is so much easier when you have a quality knife, and there’s a lot to prep for Thanksgiving! I first tried these knives 10 years ago, while visiting a professional test kitchen. You could say it was love at first slice. That’s why mine has been in my kitchen ever since.
  • Cutting board

  • 9×13 Baking dish. I adore Pyrex dishes. They’re one of those kitchen staples that that just makes cooking easier. And, I can vouch for how sturdy and durable they are (I’ve had some of mine almost 20 years). And, who doesn’t love a dish that comes with a tight-fitting lid?

How to Make Fresh Green Bean Casserole

Getting Stuff Started: I start by setting a pot of water over high heat on the stove. Then, I preheat the oven to 350°F.

Prepping the Vegetables: While the water heats up, we’ll rinse the green beans. Then, you just have to trim the ends and chop them into 2-inch pieces. I clean the mushrooms and then chop them into ½-inch pieces, and mince the garlic while I’m at it.

Boiling the Beans: Once the water is boiling, I add the green beans and salt. You’ll let them cook for 5-6 minutes until tender crisp.

Setting Up the Ice: While the beans are cooking, we’re going to fill a large bowl with ice water and set it up next to the sink.

Chilling the Beans: Drain the beans in a colander and plunge them immediately into the ice water to stop cooking. Once cool, I drain them again.

Cooking the Mushrooms: Don’t wash that pot! Instead, we’re going to melt butter over medium-high heat in it. Then, I add the mushrooms, garlic, salt, and pepper. You need to cook them about 5 minutes, until all the liquid has been released, reabsorbed, and evaporated.

Adding Flour: Sprinkle the flour over the mushrooms and cook for about a minute, stirring constantly.

Making the Sauce: I stir in the chicken broth next and keep stirring until it comes to a simmer. Then, reduce the heat to medium and add your heavy cream.

Simmering: Continue stirring and simmer for 2 to 3 minutes, until the sauce thickens. Give it a taste and add salt and pepper if desired.

Assembling the Casserole: I place the green beans in a 9×13 baking dish and pour the sauce over them. Stir carefully so everything is evenly coated.

Baking: Top the casserole with a layer of fried onions, and then pop it into the oven for 15-20 minutes. You’ll know it’s ready when the sauce is hot and bubbling.

Expert Tip

The secret to the best green bean casserole should probably come as no surprise. It’s all about the texture. When you blanch the beans, you don’t want to overcook them. We’re just giving them the head start they need before going into the oven. The goal is for them to come out of the oven mostly soft with just the slightest bite remaining. You don’t want a soft, mushy filling beneath a crunchy topping. We’re going to serve a creamy sauce, soft mushrooms, slightly crisp green beans, and a crunchy topping. Together, that balance of textures takes it right over the top.

Taste Before Baking – This is the pro move that chefs make. So, don’t skip the taste test. Make sure that before you load up the baking dish, you’re happy with the balance of flavors in the cream sauce. Adjust salt and pepper to taste!

Make It Ahead – I used to juggle all the things on the stove and in the oven on the big day. But, you can actually make the sauce and blanch the green beans ahead of time, and store them separately a few days in advance. That makes it super easy to assemble the casserole and pop it into the oven right before the meal.

Let It Rest – There are two good reasons why you don’t want to serve this one immediately. First, that’s a recipe for getting burned. Nobody likes that! But, on another level, you need to give it some time to cool so that the sauce can thicken.

Make Ahead & Storage

Make Ahead: For a regular Sunday dinner, I just make this as part of dinner. But, when it comes to holiday cooking, I start prepping this a couple of days in advance, storing the sauce and beans separately. Then, you can just assemble it when ready to cook.

How to Store: You can store leftovers in the fridge for up to 3 days, or save it in the freezer for up to a month.

How to Reheat: I reheat each serving in the microwave, in 30 to 60 second increments. If you’re reheating a larger batch, you may want to warm it over medium-low heat on the stove. You can refresh the sauce with a splash of milk, if it has thickened. And, don’t skip adding another sprinkle of fried onions to give it some crunch.

How can I make green bean casserole ahead of time?

I typically prep this recipe a few days before I plan to serve it. I wrap the boiled and chilled green beans in a paper towel, then place them in a gallon-size freezer bag in the refrigerator. Store the cooked and cooled sauce in an airtight container beside the beans. When you’re ready to make the casserole, just follow the directions below to assemble and cook it in the oven.

Can I use a slow cooker for this one?

Absolutely! I’m a huge believer in using slow cookers on Thanksgiving to ensure everything stays hot and finishes at the same time. Just combine the green beans and the sauce in a 6 qt slow cooker and set it to HIGH until bubbling, then reduce to LOW for another 2-3 hours. Just before serving, remove the lid and top with fried onions.

Side note: I love that Crock-pot for transporting foods because it has a locking lid. You can also use a 3 quart version, but I prefer the larger one since it gives me more real estate for those tasty fried onions.

What kind of green beans should I use?

For this recipe, I find that regular green beans are ideal. The thickness makes them a little less finicky when it comes to achieving the ideal texture when they come out of the oven. You can use haricots verts for visual interest, as they’re thinner, but it’s far harder to achieve the slightly crisp texture that makes this casserole stand out.

Blanching Instructions

  • Bring a large pot of water to a boil. Add green beans and 2 tablespoons salt to boiling water. Cook beans until bright green and crisp-tender, about 5-6 minutes.

  • Fill a large bowl with ice water while beans are cooking. Set it next to the sink. Drain beans in a colander and plunge immediately into ice water to stop cooking. Once cooled, drain beans again in the colander.

Sauce Instructions

  • Add butter to the empty pot and melt over medium-high heat until foaming subsides. Add mushrooms, garlic, salt, and pepper; cook until mushrooms are tender and all liquid evaporates, about 5 minutes.

  • Sprinkle mushrooms with flour and cook for 1 minute, stirring constantly. Stir in broth and bring to simmer, stirring constantly. Add cream, reduce heat to medium, and simmer until sauce thickens, about 2-3 minutes. Season to taste with salt and pepper.

Assembly Instructions

  • Preheat the oven to 350°F. Place the green beans in a 9×13 baking dish. Pour the sauce over the beans. Top with an even layer of fried onions. Bake for 15-20 minutes, until the beans and sauce are hot and bubbling.
